Our Heritage Process
We bake the way our grandmothers did — slow starters, long fermentation, and careful hands. Our flour is stone-milled within fifty miles of the oven, our butter is churned in Normandy, and nothing leaves the bench until it’s ready. Each loaf is shaped individually, scored by memory, and baked on a hearth that has not cooled in thirty-eight years.
